All devices connecting to just the primary Deco
All devices seem to connect to just the primary unit, at least when I look in my app.
M9 Primary : 15 devices connected
2 x M9 satellites: 0 devices connected
1 x M5 satellite: 0 devices connected
I have just reset all units and recreated the network, hoping for this to change, but to no avail.
Connectivity is not a catastrophe as the reason for having so many satellites isn't the distance but the need to connect units via cable in different locations.
The wi-fi is a bit weak in the room furthest away but it still works.
But it's weird.
Not even the units connected by cable to the satellites show up as connected to them!
Everything is updated, both firmware and the iPhone App.

As you can see from screenshot, your M9 Plus Deco units have firmware 1.2. You can also deduct it were released in 2019.08.09, which is quite a long time ago. This firmware is so old, Deco app can't update it. Instead of providing error message, Deco app says "up to date."
To manually update Deco M9 Plus with firmware 1.2 follow Method 3 from this TP-Link document: How to Update the Firmware of Deco

This sounds like known issue, which happens when Deco mesh has M9 Plus with older firmware 1.2.
To make sure it is, open Update Deco page in Deco app, make its screenshot and post here

To add to this: if Deco M9 Plus runs with firmware 1.2, all devices connected to Main Deco is just a reporting issue. They do connect to Satellites, too. A fix is available, which is manually updating M9 Plus to newer firmware.
Will wait for screenshot and if it is indeed firmware 1.2, will share details about manual firmware update process.

@Alexandre. Many thanks. As the app tells me that it's up-to-date, I'm at a loss about how to update it anyway.

It says that it applies for Deco M5 or Deco M9 Plus V2
Mine doesn't say V2, but just Deco M9 Plus.
Can I still use the second version?

V2 means "Hardware version V2." You can double check you have the right hardware version by inspecting the label on the bottom of M9 Plus. See How to find the hardware version on a TP-Link device
