What does disabling NAT accomplish?

What does disabling NAT accomplish?
Under Advanced, Network, Internet, there is an option to enable NAT which is enabled by default. My question is what happens when you disable NAT? In testing, it appears that NAT always occurs even if this option is disabled. Does anyone have experience with this than can explain what this option does? Does this create a one-on one NAT?
