how can wireless speed be higher than routers wan port speed?

for example archer ax20 has 10/100/1000 gb wan port but 5ghz speed is rated up to 1201gb/s

It's about your local network speed - between your wireless devices @ 5GHz and the AX20. While WAN port determines the max Internet speed,  in your LAN you can have faster speeds.

So even if i have 2gb local speed from isp i can only get 1gb/s maximum on my archer ax20?

Correct. Only your LAN wireless traffic can exceed 1 gbps limit.
