Extend archer AX-111000 coverage over ethernet
Can you extend the WIFI coverage using an Archer AX-111000 router to a TP-Link AX1800 via CAT-5? The ISP is AT&T fiber providing 1GB speeds but a few WIFI devices keep dropping in and out so I want to extend the coverage via a CAT-5 that is ran to the other side of the house and plug it into a new TP-Link AX1800? Will this work? I was told that ethernet port on the TP-Link AX1800 is just for output?

Unfortunately no. The AX11000 does not support EasyMesh so expanding its coverage with another router via Ethernet is not possible. You can expand coverage via Wireless using a Range Extender like the RE815X, but wireless expansion would be the only expansion of the AX11000's wireless coverage.

Thank you Carl I appreciate your time and input, however I'm even more confused now with that reponse as there are YouTube videos of extending a network with TP Links via CAT. I used the TP-Link AX1800 which is not a router and changed it from extension to an Access Point and it worked fine? I also found on the Archer AX11000 and using the Tether App that there is a Mesh mode that was off, so I turned it on and things seem smoother when moving from one side of the house to other when streaming content.

The Majority of Range Extenders can be configured as Access Points or AP mode. However, an access point is not an extension of the existing network but creating a seperate network on the same subnet. AP mode is usually used when connecting a product to a router that does not have wireless, has issues with the built in wireless or is being used to create a network in an adjacent builing like a detached garage but able to share with the main network in the house
The Mesh mode for the AX11000 is OneMesh. It does not support Ethernet backhaul but can link with a compatible TP-Link Range Extender to make a Mesh network. This link would be via Wireless though.
