Model: CPE610
Hardware Version: V1
Firmware Version: 2.2.1 Build 20200516 Rel. 40358 (0000)

I'm facing an issue with my current setup of CPE610 as a Transmitter (AP) and CPE610 & CPE510 as Receivers (Client). All 3 devices are updated to the latest firmware and I have tried setting different frequencies & settings with all options tried ON/OFF.

When the CPE's boot up after a fresh hard restart, The CPE510 is negotiated at around 240MBPS and CPE610 is negotiated at around 30-60MBPS due to different distances. After a day or two the CPE's negotiated rate drops to almost zero and needs to be restarted. I have set Ping Watchdog to overcome this issue but still it's no help.

CPE610 (AP) Settings

Transmit CCQ: 83

CPE610 (Client) Settings)

Signal Strength (Horizontal/Vertical): -89/-64 dBm

Noise Strength: -97dBm

SNR: 33dB

Transmit CCQ: 87

CPE510 (Client) Settings

Signal Strength (Horizontal/Vertical): -57/-53 dBm

Noise Strength: -94dBm

SNR: 43dB

Transmit CCQ: 95

Hi. While you set the channel width to auto, it is normal that your speed will fluctuate between 20MHz and 40MHz. You can fix that to 40MHz for a test.

From the network diagram you described, it is Point to Multiple Points instead of a traditional P2P. I think it is would be better to use MAXtream since that is designed for P2MP. Turn that on and check again.

For optimization, you can also analyze your radio frequency in your environment and find the less interfered one and use that to transmit.

@Hank21 thanks for your swift reply, I implemented your assisted fix and I have a significantly better signal on 802.11/n only mode with 40 MHz on all 3 devices, a relatively stable connectoin with a little bit adjustment to the position of the antenna.
