Although i have never tried this personally, others have reported mixing different regional versions with no issue.  

Link below for example the user has 1x US and 1x Canadian AP working together.

Philbert is right. That's a case when a user has CA and US version adopted no problem.

From my understanding, Omada Controller is a universal software that allows global customers to download and use it. No specific region version. They don't put a regional restriction on it. All you need to be careful about is the OS. If I recall, MacOS is not allowed? LUL.

Thanks @Yannie @Philbert. Seems there is a good chance the APs will work well together (its specifically the 'seamless roaming' functionality that I hope will work). I will give it a try.

Yeah. From my knowledge, basically, you don't have an issue using them. EU/US/CA have their own RF regulations. But, they have overlapped channels. Should not be a problem. I think they can even work fast roaming, EAP mesh all that stuff no problem. Give it a shot. 

I have finally received my EAP. It was adopted by the controller without any issues (I did have to update the firmware first) and fast roaming works:
