I need to plug one end (the end that goes into my router) of my AV600 Powerline into a power strip. Will the unit still work?

Connecting a powerline adapter to a power strip will either leave you with drastically reduced speed or the adapter will not be able to connect to the other adapter. It is not always the case, but never recommended like in the documentation.
