Would it work to stack a few of these switches in a ring using optical SFP+ modules and fiber links, instead of (too short) copper cables?

Of course you can use optical SFP+ modules and fiber links to stack T1700G-28TQ in a ring. That's the common way of stacking.

The installation guide specifically says "use the 10G SFP+ cable (TXC432-CU1M/TXC432-CU3M of TP-LINK for example)" without any mention of optical links, so I wanted to make sure - just in case there is some proprietary stacking protocol between the switches which requires direct copper cable connection.  Actually, before I lay some fiber, I'd like to try 2.5/5/10 Gb copper RJ45 to SFP+ modules (Mikrotik S+RJ10) as I have copper wiring already available.  Distances between the switches are about 20-30 meters.

T1700G can support to use 10G SFP+ modules with fiber, but I remember that it cannot support 10G copper RJ45 to SFP+ modules. If you already had copper SFP+ and cable, you can have a try. If they cannot work, we should use fiber for SFP+ module.

If two stackable switches are close, we can use TXC432-CU1M/TXC432-CU3M.
