Fairly sure I can't manage either of the switches via Omada but not fussed.

1 Gigabit is my top speed which again is fine.

Can i run a normal wifi SSID with access to the internal network/internet and a guest wifi which assume I can block from the local network and have internet only?

311LM is the proper one for the multi-mode if you need one. Please visit the product page if you need to learn more about it.

SG608E may not support the Omada Controller. You need to refer to its firmware as I recall this model is a revision of the TL-SG108E.

You can run multi-SSID and VLAN SSID. The AP and the 3-in-1 surely support them.

Guest Network on the AP can block local access.

SG2210P would be a great choice. If you plan to expand your network down the road and expect the latest features, I recommend you consider the ER7206(V2) + OC200 as you have chosen an SG2210P. 

ER7212PC would only be suitable for users who require a simple network with the multi-SSID and networks. No fancy features and high-end requirements.
