Can someone with any insight please advise what I would need to do to allow 5.0.15 to install, based on my current setup?

EAP225 V1 and V2 are not compatible with SDN controller 5.0.15, you may check this list:

so if you want to upgrade your controller to 5.0.15, you can only use these two EAPs under Standalone mode.
As for EAP V3, you can upgrade it to the latest firmware version, which is compatible with controller 5.0.15.
