I'm setting up an SG108E to replace a failed HP Switch.

It seems VLAN1 spans all ports, untagged, by default and that there's no way to change that behavior.

If I define a VLAN and make a port a member of that VLAN (and also set the port's PVID), broadcast traffic from VLAN1 still goes out of that port. Not the desired result; it's not true 'isolation' - I want the port to only pass traffic within its own VLAN and nothing else.

Am I missing something here? Why can't I remove VLAN1 from some ports?

Which kind of VLAN do you appy? And if a port belongs to two VLAN in 802.1Q VLAN, the data from the port can go through both VLANs.
