Hello,
Is VOIP Prioritization QOS option enough on its own?
In other words, do I still need to create a Voice VLAN profile?

The deep down part of the Voice VLAN is for organization. Even putting your on prem PBX and Phones on the same VLAN. Really for discovery / one touch configs.
If you have enough IPs for core stuff on the core vlan, then I wouldn't worry about a voice vlan.
OR if you want to PBR your voice vlan across a 2nd WAN... that maybe a good case for it.
Long answer is YES, VoIP Prioritization IS enough
