If you are talking about projects, then normally you should have special software, which can calculate the coverage based on floor plan. Also, you can do active coverage research with such software (e.g. AirMagnet Survey Pro). It costs some money and normal SIs usually use it. If you don't have it, then it is better to check it by yourself. Take 2-3 APs with you into hotel and try to check, how it goes with the walls. Otherwise you only can use your brain and imagination.
