I want to schedule my Smart Plug to turn off three hours after sunset, but the offset only goes to 59 minutes.

Thank you for your idea about the schedule hours for sunset.
The offset feature allows us to offset times for the sunset/ sunrise events defined on Kasa app, to make it more close to the actual sunset and sunrise events, so the offset time is is not that long. As a workaround, you could try to schedule to turn off the Kasa device according to local sunset/ sunrise hours.
